Spaghetti with Broccoli Florets and Fresh Tomatoes

 

  • 1 head broccoli  Florets and some stems cut into 1 inch pieces
  • 3 cloves garlic finely chopped
  • 12 ounces wheat pasta spaghetti
  • ½ cup chopped parsley
  • 4 roma tomatoes chopped into 1/2 inch pieces
  • ½ onion chopped
  • ¼ cup tomato puree
  • 2 red whole chilis

  1. Cook the wheat pasta according to directions.
  2. In a large pan, heat EV olive oil. Add the onions, and garlic and saute well. Then add the broccoli and cook with 1/4 cup of water for 3 to 4 minutes till cooked.
  3. Add the tomatoes, tomato puree and parsley and saute everything for another 5 minutes.
  4. Mix in the pasta and heat thoroughly.
  5. Optional :  Top with parmesan cheese while serving.
