Taco Night

  • 1 can organic black beans
  • 1/2 onion chopped
  • 2 pods garlic
  • Tomato juice
  • Some protein crumbles
  • Taco seasoning
  • Red and green bell pepper finely chopped
  • Half onion
  • Half cucumber
  • Lime juice/half lemon
  • Half serrano pepper
  • cilantro
  • salt
  • 2 Fresh avocado seeded and peeled
  • Lime juice
  • Finely chopped half tomato
  1. Bean filling: Saute onions till transparent. Add some garlic and protein and cook for 5 minutes. Then add tomato juice,  washed beans, taco seasoning, and cook till semi dry. Add some finely chopped red and green peppers and cook for another 5 minutes.
  2. Pico de Gallo: Combine finely chopped  tomato, onion, cucumber, serrano pepper, salt and lemon juice.
  3. Guacamole: Deseed avocado and mix with chopped tomato, salt and lemon juice. 
  4. Fill shell and add extra toppings: cheese, sour cream, lettuce, tomato and salsa.
