Protein Power Bowl

 

Ingredients:

  • 1 cup quinoa 
  • 1 cup spinach
  • 1/2 cup mushrooms
  • 1/2 cup chopped white onion
  • 1 tsp sesame oil  
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar 
  • 1/2 tsp sriracha 
  1. Saute onions on skillet with sesame oil. Add spinach and mushrooms and continue to saute while adding soy sauce, rice vinegar, and sriracha for 5-7 minutes. 
  2. Boil 1 cup of quinoa with 2 cups of water. When it starts to simmer place on low for another 5 minutes. 
  3. Add sesame sticks for a nice crunch!
